Thai Noodles with Spicy Peanut Sauce and Tofu

OMG! This was super good. It could have been the company that helped this dish along. Or the setting of the Yellowstone River flowing below our cabin as these veggies cooked up. The recipe is from food.com. We added tofu for protein and used Thai rice noodles.
